Traditional bearings in the fryer’s paddle position must be relubricated frequently to keep them reliable. However, the bearing seals inside can quickly degrade, being subjected to continuous waves of 180°C (365°F) cooking oil and frequent caustic boil-outs. In case where this leads to bearing failure, production can come to a halt for a minimum of 48-hours, contaminated food must be discarded, and the overall costs may be very high.
